Place all the ingredients except oil in a mixing bowl. Use a whisk attachment on a planetary mixer to mix at slow speed for about 1 minute. Beat further for 5 minutes at high speed.
Add oil and mix it at slow speed for 1 minute.
Scale the batter into a cake tin as required. Ensure that you choose a cake tin size that fits inside the pressure cooker you have.
Spread salt at the bottom of the pressure cooker and place an aluminum plate above it. This ensures even distribution of heat inside the cooker.
To prevent the base of the sponge from burning, place a cake ring or any metal stand.
Remove the gasket from the cooker and heat it on medium flame until it becomes hot enough inside.
Carefully place the tray inside using tongs to avoid burning your hands due to the heat of the cooker.
