Frosting

The frosting is thick and spreadable with a base that's made with fat, such as butter, cheese, or cream. It’s opaque and typically fluffy—perfect for coating a cake or piping roses or borders. The frosting also can be used as a cake “filling” between cake layers.

Icing

Icing is thinner than frosting but almost as thin as a glaze. Typically made with granulated sugar and liquid, like water, milk, or juice, icing is often drizzled or spread. Icing has more shine and a smoother consistency than frosting but lesser than glaze.

Glaze

The shiniest of all of them, glazes are usually translucent and poured over desserts, think fruit tarts within the bakery case. You’ll also see thin glazes poured over cakes, cookies, or pastries. Like icing, glazes are typically a mix of sugar and liquid. Heated jam or jam makes for a gorgeous glaze—if using jam, just strain it before applying.
